Garlic Butter Steak Bites and Potatoes

Ingredients
  

  • 2 tablespoons olive oil divided use for sautéing
  • 2 tablespoons garlic and herb butter sticks or more to taste
  • 1 pound Yukon Gold potatoes cut into bite-sized cubes
  • 1 pound sirloin steak cut into bite-sized cubes
  • 1 teaspoon salt divided use for seasoning
  • 1 teaspoon pepper divided use for seasoning
  • 1 teaspoon garlic powder divided use for seasoning

Method
 

  1. Heat a large cast iron skillet over medium heat for a couple of minutes.
  2. Add 1 tablespoon of olive oil and 1 tablespoon of garlic herb butter to the skillet.
  3. Once the butter melts, add the potatoes to the skillet. Season with ½ teaspoon of garlic powder, ½ teaspoon of salt, and ½ teaspoon of pepper.
  4. Turn the heat to medium-low, cover the skillet, and cook the potatoes for 10–12 minutes, stirring occasionally to prevent burning. Continue cooking until the potatoes are fork-tender and golden brown.
  5. While the potatoes cook, season the steak cubes with ½ teaspoon of salt, ½ teaspoon of pepper, and ½ teaspoon of garlic powder.
  6. Once the potatoes are cooked and golden, push them to one side of the skillet or remove them to avoid burning.
  7. Add the remaining tablespoon of olive oil and garlic herb butter to the empty side of the skillet. Increase the heat to medium-high.
  8. Place the steak bites into the skillet and sear for 3–4 minutes per side until browned and cooked to your desired doneness. Cook in batches if needed to avoid overcrowding. If necessary, remove the potatoes at this point to prevent burning.
  9. When the steak is done, lower the heat to medium-low. Add extra garlic butter if desired, allowing it to melt and coat both the potatoes and steak. Toss to coat evenly.
  10. Taste and adjust seasoning if necessary, then serve.
