Method
- Preheat your oven to 325°F (163°C).
- Generously season both sides of the chuck roast with salt and pepper.
- Place the roast in a baking dish or enameled cast iron dish, cover with a lid or foil, and bake for 1 hour per pound of meat.
- After roasting, remove the roast from the oven and shred it into large chunks using two forks. If the meat is not shredding easily, return it to the oven for an additional 30 minutes.
- Raise the oven temperature to 425°F (220°C).
- Toss the shredded pieces of roast in the rendered fat to coat. Then, place the meat back in the oven, uncovered, for 25 minutes, or until you see crispy, caramelized edges.
- Remove from the oven and serve.
