  • 1 10 oz bag shredded coleslaw mix fresh cabbage blend
  • 2 ½ ripe mangoes diced sweet and juicy

  • 3 ½ mini bell peppers thinly sliced for color and crunch
  • C fresh cilantro roughly chopped herbaceous freshness

Method
 

  1. Whisk together olive oil, lime juice, apple cider vinegar, honey, chili powder, and salt in a small bowl until smooth.
  2. Place the coleslaw mix into a large serving bowl.
  3. Fold in the diced mangoes over the slaw.
  4. Sprinkle in the chopped green onions.
  5. Layer the thinly sliced mini peppers into the bowl.
  6. Scatter the chopped cilantro evenly over the mixture.
  7. Pour the prepared dressing over the slaw and toss until all ingredients are coated.
  8. Cover and refrigerate for at least 1 hour before serving to allow flavors to meld.
