- Preheat the oven to 425°F (220°C). Line a sheet pan with parchment paper or lightly coat with oil.
- Place the chicken, sweet potatoes, and onion on the prepared sheet pan. Drizzle with olive oil and season with garlic powder, paprika, chili powder, salt, and pepper.
- Toss everything gently to coat evenly, then arrange in a single layer. Roast in the oven for 20 minutes, stirring halfway through for even cooking.
- Remove the sheet pan from the oven. Scatter the pickled jalapeños and crumbled feta over the top, then drizzle with hot honey. Broil for 2–4 minutes until lightly caramelized.
- Take the pan out of the oven and top with sliced avocado and chopped cilantro if desired. Serve immediately while warm.
