Ingredients
  

For the Chicken:
  • 1 ¼ - 1 ½ pounds boneless skinless chicken breasts Use thin-sliced for quicker cooking
  • 1 tablespoon avocado oil For cooking the chicken
  • 1 teaspoon smoked paprika Adds smoky flavor
  • ½ teaspoon chili powder For a mild heat
  • ½ teaspoon garlic powder For savory flavor
  • Salt & pepper to taste To season the chicken
For the Bowls:
  • 1 cup cooked rice or cauliflower rice Base for the bowl cauliflower rice for low-carb
  • 1 avocado diced Creamy texture
  • ¼ cup chopped fresh cilantro Fresh herb garnish
  • ¼ cup thinly sliced red onion For crunch and bite
  • 1 tablespoon extra-virgin olive oil To drizzle over the top
For the Street Corn:
  • 1 ½ cups corn fresh frozen or grilled (Corn adds sweetness and texture)
  • cup sour cream or dairy-free yogurt Use dairy-free yogurt for a vegan version
  • ½ lime squeezed Adds a tangy kick
  • ¼ teaspoon chili powder For extra heat
  • 3 tablespoons chopped cilantro Herb flavor
  • Salt to taste For seasoning

Method
 

For the Chicken:
  1. Heat the avocado oil in a skillet over medium-high heat.
  2. Season the chicken with smoked paprika, chili powder, garlic powder, salt, and pepper.
  3. Cook the chicken in the skillet for 3–4 minutes per side until golden and cooked through.
  4. Transfer the chicken to a cutting board and slice into strips.
For the Corn:
  1. Heat a dry skillet over medium-high heat and add the corn. Cook for 5–7 minutes until it starts to char.
  2. Remove the corn from the heat and set aside.
For the Bowls:
  1. In a small bowl, whisk together the sour cream (or yogurt), lime juice, chili powder, chopped cilantro, and salt.
  2. Assemble the bowls by placing rice or cauliflower rice as the base.
  3. Top the rice with sliced chicken, diced avocado, red onion, and the charred corn.
  4. Drizzle the yogurt mixture over the top and garnish with fresh cilantro.
  5. Serve with extra lime wedges and a dash of hot sauce if desired.
