Ingredients

  • 14 oz mushrooms halved cremini or button mushrooms work best
  • 2.5 tablespoon oil olive or canola for marinade
  • 2.5 tablespoon Tamari sauce or soy sauce for vegan option
  • 4 garlic cloves minced finely for flavor
  • 2.5 teaspoon fresh thyme chopped finely
  • 2.5 tablespoon fresh parsley roughly chopped
  • 1 teaspoon smoked paprika or mild chili powder for heat
  • ½ teaspoon black pepper freshly ground to taste
  • 1.25 tablespoon oil for brushing while grilling
  • 1.25 tablespoon Tamari sauce or soy sauce for brushing
  • Fresh parsley chopped optional for garnish
  • Chili flakes optional for garnish
  • Lemon wedges optional to serve

Directions

  • Combine oil, Tamari sauce, garlic, thyme, parsley, paprika, and black pepper in a bowl.
  • Slice mushrooms in halves (or leave small mushrooms whole).
  • Add mushrooms to the bowl with marinade and toss until coated evenly.
  • In a small cup, stir together oil and Tamari sauce for brushing.
  • Thread mushrooms onto skewers and place on a preheated grill or grill pan.
  • Grill mushrooms until lightly charred and tender, about 3–4 minutes per side, brushing with the oil-Tamari mixture as needed.
  • Transfer skewers to a serving plate and sprinkle with parsley and chili flakes if desired.
  • Serve immediately with lemon wedges on the side.
