Ingredients
  

  • 2 ½ cups plain Greek yogurt full-fat or low-fat for creaminess
  • 7 large eggs room temperature for smoother texture
  • cup maple syrup or honey for natural sweetness
  • 1 teaspoon pure vanilla extract adds aroma
  • 2 ½ tablespoons cornstarch or tapioca starch to help set
  • 1 ¼ cups mixed berries fresh or frozen lightly thawed if frozen

Method
 

  1. Preheat your oven to 350°F and lightly grease a 9×9-inch baking dish with butter or oil.
  2. In a mixing bowl, combine the Greek yogurt, eggs, maple syrup, vanilla extract, and cornstarch, whisking until fully incorporated.
  3. Pour the yogurt mixture into the prepared baking dish, spreading it evenly, then gently scatter the berries on top.
  4. Place the baking dish in the oven and bake for 35-40 minutes, until the edges are golden and the center is set but slightly wobbly.
  5. Remove the dish from the oven and let it cool completely before slicing into 11 pieces.
  6. Enjoy warm or chilled on its own, or top with extra yogurt and berries. Store leftovers in an airtight container in the fridge for up to 5 days.
