- In a medium saucepan, combine the fresh peaches, lemon zest, vanilla extract, sugar, and 2 cups of cold water. Heat over medium heat, but do not let it come to a boil.
- Cook the mixture for about 15-25 minutes, or until the peaches soften enough to be easily mashed. The cooking time may vary depending on the ripeness of the peaches.
- Mash the peaches using a masher or wooden spoon, breaking them down into a pulp.
- Remove from heat and let the mixture cool completely in the refrigerator for about 2 hours. This allows the flavors to fully infuse.
- Once cooled, strain the peach mixture through a fine mesh strainer, discarding the solids (or set them aside for another use).
- Pour the fresh lemon juice, the remaining 4 cups of cold water, and ice into the strained peach mixture.
- Stir everything together until well combined, and pour into glasses. Garnish with lemon slices, fresh peach slices, or mint, and serve chilled.
