Oven-Baked Salmon with Lemon Butter Sauce

Ingredients
  

  • 6 skinless salmon fillets fresh or thawed approx. 6 oz each
  • 3 tablespoons lemon juice freshly squeezed divided
  • 1 ½ tablespoons olive oil extra virgin
  • 1 ½ tablespoons garlic finely minced
  • 3 tablespoons dry white wine or substitute 3 teaspoons Dijon mustard
  • teaspoon salt to taste
  • teaspoon cracked black pepper freshly ground
  • cup unsalted butter room temperature
  • 3 teaspoons garlic minced for sauce
  • 3 tablespoons dry white wine or 1 ½ teaspoons Dijon mustard for sauce
  • ¾ cup heavy cream or thickened cream
  • 2-3 tablespoons lemon juice fresh for sauce
  • 1 ½ tablespoons fresh parsley finely chopped divided

Method
 

  1. Preheat your oven to 425°F (220°C) and lightly coat a baking dish with oil.
  2. Pat the salmon fillets dry using paper towels.
  3. Mix lemon juice, olive oil, garlic, and wine in a small bowl, then rub this mixture evenly over each fillet.
  4. Arrange the salmon in the prepared baking dish and season with salt and black pepper.
  5. Bake for 10-12 minutes or until the salmon is opaque and flakes easily with a fork.
  6. Meanwhile, melt butter in a small saucepan over medium heat.
  7. Add minced garlic and sauté for about 30 seconds until fragrant.
  8. Pour in white wine and simmer for 2-3 minutes until slightly reduced.
  9. Stir in the cream and cook until the sauce thickens just enough to coat the back of a spoon.
  10. Remove from heat and mix in lemon juice and half of the chopped parsley.
  11. Drizzle the sauce over the baked salmon and gently mix with the natural pan juices.
  12. Serve immediately garnished with remaining parsley and enjoy.
