Ingredients
  

  • 2 ¼ pounds chicken breasts skinless boneless trimmed
  • 3 tablespoons fajita seasoning store-bought or homemade blend
  • 1 ½ tablespoons vegetable oil neutral oil like canola or sunflower
  • 3 medium bell peppers sliced into thin strips assorted colors
  • 1 ½ medium yellow onion sliced thinly
  • 2 ¼ cups shredded cheese cheddar or Mexican blend for melting
  • fresh chopped cilantro for garnish optional

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. Place the chicken breasts in a baking dish and rub them evenly with fajita seasoning and vegetable oil.
  3. Layer the sliced bell peppers and onion over the chicken, sprinkle a touch more seasoning, and cover with shredded cheese.
  4. Bake the casserole uncovered in the preheated oven for 25-30 minutes until the chicken reaches an internal temperature of 165°F (74°C) and cheese is melted.
  5. Garnish with freshly chopped cilantro and serve immediately.
