Ingredients
  

For the Garlic Parmesan Chicken:
  • 2 pounds boneless skinless chicken breast (cut into thin cutlets)
  • cup Italian-style bread crumbs for coating
  • ¼ cup grated parmesan cheese for coating
  • 1 teaspoon garlic powder adds flavor
  • ½ teaspoon salt for seasoning
  • 2 tablespoons olive oil can substitute with any neutral oil
For the Pasta with Garlic Cream Sauce:
  • 16 ounces penne pasta uncooked
  • 6 tablespoons butter adds richness
  • 4 cloves garlic pressed
  • 2 tablespoons flour for thickening the sauce
  • 2 cups heavy cream creates a rich and creamy sauce
  • 1 cup chicken broth to thin the sauce
  • ¼ cup grated parmesan for flavor in the sauce
  • 1 teaspoon salt for seasoning
  • ½ teaspoon pepper for seasoning
Garnish (optional):
  • chopped parsley for garnish

Method
 

  1. Cook the pasta according to the package directions.
  2. For the Garlic Parmesan Chicken, cut or pound the chicken breasts into thin cutlets.
  3. Mix the bread crumbs, parmesan cheese, garlic powder, and salt in a shallow dish.
  4. Coat each piece of chicken with the breadcrumb mixture, pressing the coating on both sides.
  5. Heat a large skillet over medium heat and add 2 tablespoons of olive oil. Once the oil is hot, add the chicken in batches. Cook for 4-5 minutes per side, until golden brown and the internal temperature reaches 165°F. If necessary, add more olive oil between batches.
  6. Remove the cooked chicken from the skillet and set it aside.
  7. In the same skillet, melt the butter. Once melted, add the garlic and cook for about 30 seconds until fragrant.
  8. Stir in the flour and cook for 1 minute to create a roux.
  9. Gradually add the chicken broth, stirring to smooth out the mixture. Bring to a simmer and cook for 1-2 minutes until the sauce thickens.
  10. Stir in the cream, salt, pepper, and parmesan cheese. Let the sauce simmer for 3-5 minutes, stirring occasionally, until thickened.
  11. Toss the cooked pasta into the sauce, making sure the pasta is well coated.
  12. Serve the chicken either whole or sliced on top of the pasta. Garnish with chopped parsley, if desired.
