Ingredients
  

  • 4 boneless skinless chicken breasts (choose breasts that are roughly 8 oz each)
  • 2 teaspoon sea salt adjust to taste
  • ½ teaspoon black pepper freshly ground
  • ½ teaspoon dried thyme for herbaceous flavor
  • ½ teaspoon dried oregano adds a Mediterranean touch
  • ½ teaspoon dried rosemary for a savory note
  • ½ teaspoon dried parsley optional for garnish
  • 1 tablespoon olive oil for searing
  • 3 tablespoon unsalted butter adds richness
  • ½ cup reduced-sodium chicken broth helps make the sauce
  • 5 cloves garlic minced for maximum flavor

Method
 

  1. Pat the chicken breasts dry with paper towels, then season both sides with salt, pepper, and dried herbs.
  2. Heat olive oil in a large skillet over medium-high heat. Add the chicken breasts to the pan in a single layer. Sear for 4-8 minutes on each side, or until golden and just barely cooked through (reduce heat to medium if it browns too quickly). Once cooked, transfer to a plate and cover to keep warm.
  3. Lower the heat and add the butter to the skillet. Let it melt, scraping the bottom of the pan with a wooden spoon to deglaze and incorporate the fond.
  4. Pour in the chicken broth and continue stirring. Once the broth is mixed in, add the minced garlic. Sauté the garlic for about 1 minute, or until fragrant.
  5. Return the chicken breasts to the skillet, flipping them to coat in the sauce. If necessary, heat for an additional 1-2 minutes to warm through.
  6. Serve the garlic butter chicken with the pan juices spooned over the top.
