- Pat the chicken breasts dry with paper towels, then season both sides with salt, pepper, and dried herbs.
- Heat olive oil in a large skillet over medium-high heat. Add the chicken breasts to the pan in a single layer. Sear for 4-8 minutes on each side, or until golden and just barely cooked through (reduce heat to medium if it browns too quickly). Once cooked, transfer to a plate and cover to keep warm.
- Lower the heat and add the butter to the skillet. Let it melt, scraping the bottom of the pan with a wooden spoon to deglaze and incorporate the fond.
- Pour in the chicken broth and continue stirring. Once the broth is mixed in, add the minced garlic. Sauté the garlic for about 1 minute, or until fragrant.
- Return the chicken breasts to the skillet, flipping them to coat in the sauce. If necessary, heat for an additional 1-2 minutes to warm through.
- Serve the garlic butter chicken with the pan juices spooned over the top.
