Ingredients

  • ¾ oz / 20g feta cheese crumbled for crispy texture
  • 1 small tortilla or a slice of toasted bread your choice
  • ¼ avocado smashed for creamy texture
  • Dried oregano for seasoning
  • Red pepper flakes for spice
  • Cooking oil spray or olive oil spray for frying
  • Lemon juice freshly squeezed for a zesty flavor
  • Pickled onions for garnish optional
  • Chili oil for garnish optional

Directions

  • Heat a small fry pan or skillet and lightly spray with cooking oil. Add the crumbled feta cheese, ensuring it is spread evenly in the pan, including along the outer edges.
  • Let the feta cheese sauté over medium heat for about 2 minutes until it begins to melt and turn golden without burning. Gently crack the egg into the center of the pan.
  • Season the egg with a pinch of dried oregano and red pepper flakes. Allow the egg to cook to your preferred level—whether that's a runny yolk or medium.
  • Meanwhile, warm the tortilla on a stove (over a gas flame), in the oven, or in the microwave. Once warmed, spread the smashed avocado evenly across the surface of the tortilla, then squeeze a bit of lemon juice over it.
  • Once the egg is cooked and the feta cheese has formed a golden, crispy crust, carefully remove the egg and feta from the pan using a spatula and place it on top of the prepared tortilla.
  • Garnish with pickled onions and a drizzle of chili oil. Serve immediately and enjoy your crispy feta fried eggs!
