Crispy Feta Fried Eggs

- ¾ oz / 20g feta cheese crumbled for crispy texture

- Cooking oil spray or olive oil spray for frying
- Lemon juice freshly squeezed for a zesty flavor

Heat a small fry pan or skillet and lightly spray with cooking oil. Add the crumbled feta cheese, ensuring it is spread evenly in the pan, including along the outer edges.
Let the feta cheese sauté over medium heat for about 2 minutes until it begins to melt and turn golden without burning. Gently crack the egg into the center of the pan.
Season the egg with a pinch of dried oregano and red pepper flakes. Allow the egg to cook to your preferred level—whether that's a runny yolk or medium.
Meanwhile, warm the tortilla on a stove (over a gas flame), in the oven, or in the microwave. Once warmed, spread the smashed avocado evenly across the surface of the tortilla, then squeeze a bit of lemon juice over it.
Once the egg is cooked and the feta cheese has formed a golden, crispy crust, carefully remove the egg and feta from the pan using a spatula and place it on top of the prepared tortilla.
