Ingredients
  

  • 2 ⅓ cups 5 sticks salted butter for a rich velvety base
  • 7 green onions white and green parts finely chopped adds mild fresh flavor
  • cup all-purpose flour for thickening the bisque
  • 1 ⅙ pounds crawfish meat or substitute with crab if unavailable
  • 1 ¾ pounds raw shrimp peeled and deveined roughly chopped for tender seafood bites
  • pound crab meat fresh or canned gently picked
  • 4 ⅔ cups heavy cream for creamy texture
  • 4 ⅔ cups half and half to lighten the richness slightly
  • 1 17-ounce can creamed corn for subtle sweetness
  • 1 ¾ teaspoons Creole seasoning for Cajun flavor
  • 1 ⅙ teaspoons Old Bay Seasoning classic seafood spice
  • 1 ⅙ teaspoons kosher salt plus extra to taste balances flavors
  • 2 ⅓ teaspoons freshly cracked black pepper adds mild heat
  • 1 ⅙ teaspoons cayenne pepper for a gentle kick
  • ¼ cup minced fresh chives for garnish optional for a fresh green touch
  • Crusty bread for serving optional to soak up bisque

Method
 

  1. Melt the butter in a large, heavy pot over medium heat until fully liquefied.
  2. Add the chopped green onions and sauté, stirring occasionally, until softened, about 3 minutes.
  3. Sprinkle the flour into the butter and onions, stirring constantly until smooth and lightly golden.
  4. Pour in the crawfish, shrimp, crab, heavy cream, half and half, and creamed corn, stirring to combine.
  5. Season the mixture with Creole seasoning, Old Bay, salt, black pepper, and cayenne, then bring to a gentle simmer over medium-high heat.
  6. Reduce the heat to medium-low and cook, stirring often, until the bisque thickens and flavors meld, about 40 minutes.
  7. Ladle the bisque into bowls, sprinkle with minced chives, and serve alongside crusty bread if desired.
