- Add the chopped strawberries, Greek yogurt, honey, and vanilla extract to a large bowl. Mix well until fully combined.
- Scoop about 2 tablespoons of the yogurt mixture and place it onto a parchment paper-lined baking sheet or large plate, forming clusters. You should make about 10 clusters.
- Place the baking sheet with yogurt clusters into the freezer. Freeze until completely solid, about 1-2 hours.
- Once the clusters are frozen, melt the chocolate. In a microwave-safe bowl, combine the chocolate chips and coconut oil. Microwave in 15–30 second intervals, stirring between each, until fully melted and smooth.
- Remove the frozen yogurt clusters from the freezer. Dip each one into the melted chocolate, ensuring it is fully coated, using a spoon for precision.
- Return the chocolate-coated clusters to the prepared baking sheet. Sprinkle with sea salt, if desired.
- Place the clusters back into the freezer for a few minutes to allow the chocolate to harden and the yogurt to firm up. Enjoy!
