Cheesy Ground Beef and Rice Casserole

Ingredients
  

  • 1 pound ground beef Lean beef works best for this recipe
  • 1 small sweet onion diced Adds sweetness to balance the savory beef
  • 4 cloves garlic minced Fresh garlic for added flavor
  • 2 10.5 ounce cans cream of celery soup Or other varieties such as cream of mushroom
  • 1 ½ cups beef stock Substitute with chicken broth or water if needed
  • 1 teaspoon garlic powder Optional for extra garlic flavor
  • 1 teaspoon onion powder Optional for depth of flavor
  • 1 teaspoon Italian seasoning Herb blend to enhance flavor
  • 1 teaspoon paprika Adds warmth and color
  • ½ teaspoon kosher salt Adjust to taste
  • ½ teaspoon black pepper For seasoning
  • 1 cup instant rice For quick cooking or substitute with leftover rice
  • 12 ounces frozen mixed vegetables Any mix of vegetables works
  • 2 cups shredded sharp cheddar cheese For a sharp flavorful topping

Method
 

  1. Preheat the oven to 350°F. Spray a 9x13-inch baking dish with cooking spray and set it aside.
  2. In a large Dutch oven or skillet, cook the ground beef and diced onion over medium heat. Break up the beef as it cooks and stir occasionally until the meat is browned and the onion is softened, about 10 minutes. Drain any excess grease.
  3. Add the minced garlic to the pan and cook for 30 seconds until fragrant. Remove the pan from heat.
  4. Stir in the cream of celery soup, beef stock, garlic powder, onion powder, Italian seasoning, paprika, salt, and pepper.
  5. Add the instant rice and frozen mixed vegetables to the pan, stirring until well combined.
  6. Transfer the mixture to the prepared baking dish and spread it out evenly.
  7. Sprinkle the shredded cheddar cheese evenly over the top of the casserole.
  8. Cover the baking dish with nonstick foil and bake for 45 minutes, or until bubbly and the cheese has melted.
  9. Remove the foil and place the casserole under the broiler for a few minutes to lightly brown the cheese.
  10. Garnish with fresh or dried parsley (optional) and serve hot.
