Ingredients

  • 3 teaspoons olive oil for greasing the casserole dish
  • 6 chicken breasts use thinly sliced or halve large breasts horizontally for even cooking

  • 3 cups broccoli florets blanched for 2 minutes to keep vibrant green
  • 9 slices bacon cooked until crispy and chopped
  • ½ cup mozzarella cheese shredded for topping

Directions

  • Preheat your oven to 400°F (205°C) so it’s ready for baking.
  • Lightly coat the bottom of a 13x9-inch casserole dish with olive oil.
  • Arrange the chicken breasts evenly in the prepared casserole dish.
  • Season the chicken generously with salt and black pepper.
  • Layer the blanched and chopped broccoli evenly over the chicken.
  • Sprinkle the crispy chopped bacon over the broccoli layer.
  • Scatter shredded mozzarella cheese on top of the bacon.
  • Finish by covering everything with shredded cheddar cheese.
  • Bake the casserole uncovered for 25–30 minutes, or until the chicken reaches an internal temperature of 165°F.
