Buffalo Chicken Sliders

- 1 rotisserie chicken shredded about 3-4 cups shredded chicken
- ½ cup buffalo wing sauce for spicy flavor
- ½ cup ranch dressing creamy base for the sauce
- 1 teaspoon cajun seasoning for added spice
- ¼ teaspoon salt to taste
- ¼ teaspoon pepper to taste
- 2 packages King's Hawaiian rolls 12 count each soft, sweet slider buns
- 8 ounces shredded monterey jack cheese for melting
For the topping:
- 3 tablespoons unsalted butter melted for brushing the rolls
- ½ teaspoon Italian seasoning for herby flavor
Preheat oven to 350°F. Spray a large baking dish or rimmed baking sheet with cooking spray. Set aside.
Shred the rotisserie chicken and place it in a bowl. Add the buffalo wing sauce, ranch dressing, cajun seasoning, salt, and pepper. Stir until well combined.
Without separating the rolls, use a large serrated knife to slice the rolls in half horizontally, like you would slice a bagel. Arrange the bottom halves in the prepared baking pan, cut side up.
Sprinkle half of the shredded cheese evenly over the bottom rolls, then spread the chicken mixture on top. Finish by sprinkling the remaining cheese over the chicken.
Place the top halves of the rolls on top of the cheese and chicken.
In a small bowl, mix the melted butter with Italian seasoning. Brush the mixture evenly over the tops of the rolls.
Bake the sliders for 10-15 minutes, or until the cheese is melted and the tops of the rolls are golden brown.
If desired, serve the sliders with coleslaw either inside the slider or as a side.
These sliders are perfect for a game day snack or casual get-together. Feel free to serve them with coleslaw for extra crunch!
