Ingredients
  

Homemade Ranch Dressing
  • cup mayonnaise whole egg mayonnaise for smoother flavor
  • cup sour cream full-fat for best consistency
  • cup buttermilk substitute with homemade buttermilk if needed, see notes
  • 2 ½ tablespoon parsley curly parsley, finely minced, or use flat-leaf parsley
  • 2 teaspoon fresh dill minced
  • ½ teaspoon apple cider vinegar or use lemon juice as a substitute
  • ½ teaspoon lemon juice or use apple cider vinegar
  • ½ teaspoon Worcestershire sauce
  • ½ teaspoon onion powder
  • 1 teaspoon garlic powder
Buffalo Chicken Dip
  • 1 cup Frank’s Red Hot sauce or another hot sauce of choice
  • 3 cups shredded cooked chicken breast can use poached or rotisserie chicken
  • 250 g/8oz cream cheese cut into cubes
  • 2 ½ cups shredded colby cheese freshly shredded for best melt
  • 1 ¼ cups shredded cheddar cheese freshly shredded
  • 1 teaspoon ground black pepper
  • ½ cup green onion finely sliced
Garnish & Serving
  • Extra green onion for garnish
  • Corn chips crackers crostini or vegetable sticks like celery

Method
 

  1. Preheat oven to 350°F (180°C). prep

  3. Make ranch dressing base: In a bowl, combine mayonnaise, sour cream, buttermilk, parsley, dill, vinegar, lemon juice, Worcestershire sauce, onion powder, and garlic powder. Let the flavors develop for 10 minutes. prep
  4. Simmer on stove: Transfer the ranch mixture to a saucepan over medium-low heat. Add cream cheese, hot sauce, and pepper. Stir constantly until the cream cheese melts and the mixture becomes smooth.
  5. Mix: Transfer the hot mixture into a large bowl. Add shredded chicken, ¾ of the colby and cheddar cheeses, and green onions. Stir everything together until fully combined.
  6. Transfer the mixture into a 6-cup (1.5L) casserole dish. Top with the remaining cheese.
  7. Bake for 20 minutes or until the dip is bubbly and golden. If you want extra brown spots, turn on the broiler for the last 2–3 minutes.
  8. Garnish with extra green onions and serve with your choice of chips, crackers, or veggie sticks (especially celery).
