  • 2 ¼ cups old-fashioned oats provides texture and bulk
  • 1 teaspoon baking powder helps with the rise of the oatmeal
  • 1 ½ teaspoons ground cinnamon adds warmth and flavor
  • ¼ teaspoon salt enhances sweetness and balances flavors
  • 2 cups fresh blueberries plus extra for topping, for natural sweetness and color

Method
 

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine the eggs, almond milk, applesauce, maple syrup, melted butter, and vanilla extract. Whisk until fully incorporated.
  3. Add the oats, baking powder, cinnamon, and salt to the bowl. Stir until well mixed.
  4. Fold in the fresh blueberries carefully into the oatmeal mixture.
  5. Pour the prepared oatmeal mixture into a greased 9x9 baking dish. Top with a few additional blueberries.
  6. Bake for 35-40 minutes, or until the oatmeal is fully set and lightly browned on top.
