Directions

  • Preheat the oven to 350°F (175°C).
  • In a large mixing bowl, combine the eggs, almond milk, applesauce, maple syrup, melted butter, and vanilla extract. Whisk until fully incorporated.
  • Add the oats, baking powder, cinnamon, and salt to the bowl. Stir until well mixed.
  • Fold in the fresh blueberries carefully into the oatmeal mixture.
  • Pour the prepared oatmeal mixture into a greased 9x9 baking dish. Top with a few additional blueberries.
  • Bake for 35-40 minutes, or until the oatmeal is fully set and lightly browned on top.
