Ingredients
  

  • 4 boneless skinless chicken breasts 6 ounces each pounded to an even thickness
  • ¼ cup balsamic vinegar adds a tangy flavor
  • 2 tablespoons honey for sweetness
  • 2 tablespoons olive oil helps the sauce coat the chicken
  • 2 teaspoons Dijon mustard for mild heat and depth
  • 1 teaspoon dried basil adds an herby touch
  • 1 teaspoon salt for seasoning
  • ½ teaspoon black pepper for seasoning
  • 4 garlic cloves minced adds aroma
  • 2 pints cherry tomatoes halved adds freshness and sweetness
  • Chopped parsley for garnish

Method
 

  1. Preheat the oven to 425°F.
  2. Pat the chicken breasts dry with paper towels. Cover the chicken with plastic wrap and use a meat mallet or rolling pin to pound them to an even thickness. Place the chicken in a 9x13 oven-safe baking dish.
  3. In a mixing bowl, whisk together balsamic vinegar, honey, olive oil, Dijon mustard, dried basil, salt, pepper, and minced garlic until combined.
  4. Pour the marinade over the chicken breasts, flipping them to ensure they’re evenly coated. Let the chicken marinate for at least 10 minutes but no more than 2 hours.
  5. Slice the cherry tomatoes and add them to the baking dish around the chicken breasts.
  6. Bake the chicken for 20-25 minutes, or until a meat thermometer inserted into the thickest part of the chicken reads 165°F.
  7. Once done, garnish the chicken with chopped parsley and serve with your choice of sides.
