Apple Fritter Bites

These bite-sized apple fritters are baked, not fried, and topped with a sweet, caramelized apple glaze—perfectly shareable and utterly delicious!

Ingredients
  

  • 1 ½ cups all-purpose flour for a tender texture
  • 2 teaspoon baking powder helps fritters rise
  • ½ teaspoon kosher salt to balance flavors
  • 2 teaspoon ground cinnamon adds warmth and spice
  • ¼ cup unsalted butter melted for richness
  • ¼ cup granulated sugar adds sweetness
  • 1 large egg for binding the dough
  • ½ teaspoon vanilla extract for flavor
  • ½ cup no-sugar-added applesauce adds moisture and apple flavor
  • 1 ½ cups peeled and finely diced Honeycrisp apples about 2 medium apples; sweet and tart variety
Glaze:
  • 2 cups powdered sugar for a smooth, sweet finish
  • cup plus 2 tablespoon apple cider or apple juice for a light apple flavor in the glaze

Method
 

  1. Preheat the oven to 400°F (200°C). Lightly spray a baking sheet with nonstick cooking spray.
  2. In a medium bowl, whisk together the flour, baking powder, salt, and cinnamon.
  3. In a large bowl, whisk together the melted butter and sugar until smooth. Add the egg and whisk again. Stir in the vanilla extract and applesauce until well combined.
  4. Gradually fold the dry ingredients into the wet mixture until fully combined. Carefully fold in the diced apples.
  5. Scoop 1 tablespoon of batter and place it in mounds a few inches apart on the prepared baking sheet.
  6. Bake for 10 minutes, then remove from the oven. Switch the oven to broil (high heat).
  7. While the fritters bake, prepare the glaze by whisking together the powdered sugar and apple cider (or juice) until smooth and thin.
  8. Brush the glaze over each fritter, allowing it to drip down the sides. Return the fritters to the oven and broil for 2-4 minutes, checking often to ensure they don’t burn. Rotate the baking sheet every minute for even browning.
  9. Brush the remaining glaze over the fritters and let them set on the baking sheet for about 15 minutes, allowing the glaze to harden slightly.
