Method
- Preheat the oven to 400°F (200°C). Lightly spray a baking sheet with nonstick cooking spray.
- In a medium bowl, whisk together the flour, baking powder, salt, and cinnamon.
- In a large bowl, whisk together the melted butter and sugar until smooth. Add the egg and whisk again. Stir in the vanilla extract and applesauce until well combined.
- Gradually fold the dry ingredients into the wet mixture until fully combined. Carefully fold in the diced apples.
- Scoop 1 tablespoon of batter and place it in mounds a few inches apart on the prepared baking sheet.
- Bake for 10 minutes, then remove from the oven. Switch the oven to broil (high heat).
- While the fritters bake, prepare the glaze by whisking together the powdered sugar and apple cider (or juice) until smooth and thin.
- Brush the glaze over each fritter, allowing it to drip down the sides. Return the fritters to the oven and broil for 2-4 minutes, checking often to ensure they don’t burn. Rotate the baking sheet every minute for even browning.
- Brush the remaining glaze over the fritters and let them set on the baking sheet for about 15 minutes, allowing the glaze to harden slightly.
